Third Anniversary Camping Trip

We realized this was the first anniversary we had just to ourselves.

1st anniversary–we were on vacation with my family in Minnesota. The hubs and I went to a coffee shop in the morning to enjoy time together and eat famous white chocolate blueberry scones.

2nd anniversary- We were hosting people in our home in South Asia. We went on a date. The restaurant we wanted to go to was closed so we chose another one and everything we ordered was terrible. My husband had a dessert place in mind afterwards but that was closed too. To our surprise, we got home and were met with cake and a little celebration put on by our friends who were staying with us. Super sweet!

3rd anniversary– Although we changed our original hiking plans since a lot of places are closed, we were still able to enjoy the outdoors.

Here are our favorite photos from our outdoor adventure as we celebrated our 3rd anniversary.

Umm…goats are my new favorite animal.

You seriously can’t look at them and definitely can’t listen to them without cracking a smile or just busting out in laughter.

And while we are on the topic of animals, donkeys are amazing!

It’s officially monsoon.

day 1= light rain. day 2= full on thunderstorm (made it back to the tent just in time)

There is something that brings you together when you pack up all the food and necessities, & a few non-necessities--ahem paint set and hammocks 😉 ,for the next two days and carry it on your back to the planned destination– a little patch of grass tucked in the mountains between a giant rock and wild ferns.

On our anniversary, we like to reread our vows and remember exactly what we promised to each other.

Stepping away from the chaos, technology, and connectivity to enjoy natural beauty brings us back to the Creator and the slow simple life.

Blueberry crisp for anniversary dessert:

( 1 cup dried blueberries, 1 T white sugar, 1/2 cup water, 3/4 cup homemade granola). Cook blueberries, sugar, and water over medium heat until boiling and most of them become rehydrated and plump. Top with granola. Enjoy!

The more we prioritize creating, the more we tend to crave it.

I am no artist but I have taken up watercolor. I still have a lot to learn but I really enjoyed it on our camping trip.

We woke up one morning to the sound of grass being pulled and chomped, only to find cows grazing right beside our tent. A calf also joined in to help take down the tent… talk about slobber. Gross.

Apparently there are scorpions here. Eeek!

homeward bound…

This man and his donkeys walked pretty much the whole trail we hiked and then some. We got in the car and drove home, only to see him again as he was delivering the perfectly cut rectangular shale to someone else so it could be stored and sold.

The shale is strapped to each donkey’s back.

And the way he stores his staff when he isn’t using it is genious.

And that was our celebratory camping trip of June 2020.
