Our 2020 Fourth of July in South Asia…11 days before unexpectedly going back to the States

Another 4th of July in South Asia.

Little did we know that less than 11 days later, we would be leaving on a plane to go back to the States basically because of Covid.

It was an all-out American food spread with star-cut watermelon, potato salad, homemade lemonade and dole whip, macaroni salad, fresh fruit, mac and cheese, mutton, hot dogs, BBQ chicken, red white and blue sprinkle cookies, and brownies.

The napkins were from The States but the straws were something we found the day before while roaming the market in our very own city. Jackpot!
I used the red, white, and blue sprinkles I bought the year before because they came on July 5, 2019. Seriously! I’m sure the sprinkles were glad to be included this year.
The local sparklers were a bust but we didn’t use them correctly. Apparently you need to light a candle and hold it at the tip for 3-5 minutes before it actually will light.

Dole whip is one of our favorite things to make and it made a great addition to the 4th of July festivities.

Here is the recipe we like to use from Chocolate Covered Katie :

  • 2 cups frozen pineapple
  • 1/4 cup milk of choice (We love canned coconut milk!)
  • 1/16 tsp salt
  • pinch of pure stevia extract, or 2 Tbsp sugar of choice
  • scant 1 Tbsp lemon juice

Blend all ingredients until a smooth consistency is reached.

Kids crafts provided by my mom who brought them over from the States. They loved the festive activities.
